This past Sunday, Derek and I decided to take a road trip! So we hired a car, planned our route and hit the road. We completely lucked out because every single hour of the day consisted of clear blue skies and brightly shining sun.

We drove north towards the Highlands and enjoyed some nice sights of castles and mountains along the way and quick rest stop in Aviemore before making it to Inverness where we stopped for lunch. The real excitement came about 15 minutes after leaving Inverness when we rounded a corner and had a full view of Loch Ness. The water was so smooth and with the sun glistening on it, it was almost velvety looking.  The true Oregonians in us came out when we yearned for the water. 

We enjoyed a lovely boat trip on Loch Ness which included a stop at Urqhuart Castle where we were able to get off the boat for a while and explore the castle ruins.  It was so gorgeous and fullfilling just to be in the fresh air and surrounded by water. 

In addition to Loch Ness, the drive back home was a major highlight. We drove a different way back where we saw several more lochs, drove through Glencoe, past Ben Nevis (the highest mountain in Scotland) and through the amazing scenery of the highlands. We even got to see some Highland Cows (coos!).

Day trip to the Highlands, Loch Ness, & Glencoe

Katie and I have been trying out a few new recipes as of late. Here are a few that we have enjoyed (each of them are vegetarian and require some dedicated time in the kitchen, but are all the more worth it as a result):

2. Next up is a Zucchini (Courgette) pasta with a homemade tomato sauce.
